WW: The Greenhouse Bran Muffins (2 points)
1 cup shreds of wheat bran cereal (all bran, etc)
1/2 cup raisins
1/3 cup boiling water
3/4 cup low-fat buttermilk
1/3 cup molasses
2 tablespoons vegetable oil
1 large egg lightly beaten
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1/8 teaspoon salt
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves
Preheat oven to 350ÂºF.
Combine first 3 ingredients in a bowl; stir well. Let stand 5 minutes. Stir in buttermilk and next 3 ingredients; set aside.
Combine flours and next 5 ingredients in a bowl; make a well in center of mixture. Add cereal mixture to flour mixture; stirring just until moist.
Divide batter evenly among 12 muffin cups coated with cooking spray.
Bake at 350ÂºF. for 20 minutes or until muffins spring back when touched lightly in center. Remove from pan immediately; place on a wire rack.
Yield: 1 dozen (serving size: 1 muffin).
