Yankee-Style BBQ Beef Brisket

Ingredients:

3 Tbsp. Olive Oil
1 (4 to 5 lb.) Beef Brisket, trim fat
2 Tbsp. Liquid Smoke
1 Onion, coarsely chopped
1 (14-oz.) bottle Catsup
1 (12-oz.) bottle Chili Sauce
1/4 cup Molasses
1/4 cup Cider Vinegar
2 Tbsp. Hot Pepper Sauce
2 Tbsp. Prepared Mustard
2 Tbsp. Worcestershire Sauce
1 to 2 tsp. ground Black Pepper
1-1/2 cups Beef Broth
2 Tbsp. fresh Lemon or Lime Juice

Heat 2 Tbsp. oil in large skillet on medium high heat. Add meat and brown on all sides. Sprinkle with liquid smoke over bottom of roasting pan. Place rack in bottom of pan. Place meat on rack and cover. Bake in 375 degree oven 1 hour. Reduce temperature to 250 degrees and bake covered 3 to 4 hours or until meat is fork tender.

Meanwhile, heat remaining oil in small saucepan over medium heat. Add onion, cook 6 minutes to soften. Add catsup, chili sauce, molasses, vinegar, hot sauce, mustard, Worcestershire sauce, black pepper and broth. Bring to a boil, reduce to simmer and cook 20 minutes, stirring occasionally. Remove from heat and stir in Lemon or Lime juice. When cool, pour into a bowl, cover and refrigerate.

When meat is done and cool enough to handle, slice into 16 slices. Place meat in a shallow baking dish or pan. Pour sauce over meat, cover and bake in 325 degree oven for 1 hour.
