This brownie is wonderfully moist and is the only way I can get my kids to eat their veggies, LOL!!
½ cup vegetable oil ½ cup chopped walnuts
1 ½ cup sugar 6 tablespoons cocoa powder
2 teaspoons vanilla ¼ cup margarine
2 cups flour 2 cups powdered sugar
½ cup cocoa ¼ cup milk
1 ½ teaspoon baking soda ½ teaspoon vanilla
1 teaspoon salt
2 cups shredded zucchini
Preheat the oven to 350 degrees F. Combine oil, sugar and 2 teaspoons of vanilla. In another bowl, combine flour, ½ cup of cocoa, baking soda and salt. Add the flour mixture into the sugar mixture then fold in the zucchini and nuts. Spread into a brownie pan and bake until edges slightly pull away from the pan. Melt together 6 tablespoons of cocoa and margarine. Blend powdered sugar, milk and ½ teaspoon vanilla. Stir into cocoa mixture. Spread over cooled brownies.
