Three-Cheese Green Bean Casserole

Makes 6 servings.

INGREDIENTS:
1 lb frozen green beans, French-cut (or cooked fresh green beans)
1/2 cup fat-free cottage cheese
1/2 cup chevre (soft goat cheese) with garlic and herbs
1/2 cup toasted slivered almonds
1/4 cup freshly grated Parmesan cheese
Freshly ground black pepper, to taste

DIRECTIONS:
Preheat oven to 375 °.
Cook frozen beans per package directions; drain.
In a blender, mix cottage cheese and chevre.
Combine beans, cheese mixture and almonds.
Place into a 2-quart casserole. Top with Parmesan and pepper.
Bake 20 min, then brown under broiler 3 min.
