2 pts. strawberries
1 cont. (8oz.) nonfat plain yogurt
1 cup peach nectar
1 Tbs. lime juice
1/2 tsp. grated lime peel
1/2 tsp. vanilla extract
Grated lime peel for garnish
Wash, dry and hull strawberries. In food processor or blender, puree strawberries. To food processor, add yogurt, peach nectar, lime juice, lime peel and vanilla extract. Process until smooth and well blended. Pour into bowl; cover and chill 2 hours.
To serve, spoon chilled strawberry soup into individual serving bowls. Garnish with lime peel.
