Chocolate Butterscotch Pie

Chocolate Butterscotch Pie

1 cup brown sugar
½ cup flour
2 cups milk, scalded
2 ounces chocolate, melted
1 tbsp water
1/8 tsp salt
2 egg yolks, slightly beaten
1 tbsp butter
½ tsp vanilla
1 baked pie shell (pastry or graham cracker crumb)
Brown Sugar Meringue (recipe follows)

Blend sugar and flour and add enough milk to make a thin mixture. Combine with remaining milk, add chocolate and stir until thickened. Cook in top of double boiler, covered, for 5 minutes.

Stir water and salt into egg yolks, add a little of the cooked mixture, return to remaining mixture, add butter and cook 1 minute longer. Cool.

Add vanilla, pour into pie shell, top with meringue and proceed as directed.

Makes 1 (9-inch) pie.

Brown Sugar Meringue

2 egg whites
4 tbsp brown sugar
½ tsp vanilla

Beat egg whites until frothy. Add sugar gradually and beat until stiff. Add vanilla and pile on pie.

Bake in slow oven (325) for 15 to 18 minutes. Topping for 1 (9-inch) pie.
