Easy Mexican Casserole

1 pound ground beef cooked
1 cup Ranch style beans
12 corn tortillas
5 ounces grated cheddar cheese
1 can Rotel tomatoes undrained
1 can cream of chicken soup
1/2 cup chopped onions
Toppings:
Shredded lettuce, chopped tomatoes, sliced ripe olives and sour cream

Brown meat with onions, add beans. Cut the tortillas in half and line buttered casserole dish with 6 tortillas. Pour the meat mixture on top of the tortillas, layer with all of the cheese and put remaining tortillas on top. In saucepan heat cream of chicken soup and the Rotel tomatoes. Pour on top of the casserole. Bake 350 degrees covered for 30 minutes.

Yields: 8 Servings

Sounds rather tasty. It doesn’t get much easier than that. I love Mexican food.
