Mexican Monterey Chicken
2 lbs. skinless boneless chicken breast halves
4-oz. Monterey Jack cheese, cut into 6 slices
1 (4-oz.) can diced green chilies, drained
2 cups crushed Cheddar cheese crackers
1 pkg. taco seasoning mix
Place chicken breasts between 2 sheets of waxed paper; pound with meat
mallet or rolling pin to flatten. Place 1 slice Monterey Jack cheese and 1 tbs. of chilies on each chicken breast; wrap chicken breasts around filling and secure with wooden toothpicks. In shallow dish, combine crackers and taco seasoning mix; blend well. Add
chicken bundles; press crumbs onto chicken to coat. Place bundles in greased 9x9x2-in. baking dish.
Bake in 350 oven 20 to 30 minutes or until chicken is tender.
