Moo Shu Chicken Breasts

By grilling up this marinated chicken you add a lot of extra flavor to this traditional Moo Shu dish. This is not only a great recipe, but it’s a lot of fun for everyone.

INGREDIENTS:

1 pound chicken breasts
8 green onions, trimmed
1 red bell pepper, cut into thin strips
1/4 cup plum jam
3 tablespoons ketchup
3 tablespoons soy sauce
2 tablespoons rice vinegar
3/4 teaspoon five spice powder
6 flour tortillas

Preheat grill. Place green onions in a shallow baking dish filled with cold water. Combine plum jam, ketchup, soy sauce, rice vinegar and five spice powder in a small bowl. Divide in half. Pound chicken breasts until no more than 1/2 inch thick.

Coat surface of chicken breasts with 1/2 of the plum mixture. Set aside. Wrap tortillas in foil and warm either in the oven on a low temperature or on the top rack of your grill. Do not let burn or dry out. Place chicken breasts on grill over medium heat. Remove green onions from water and place on grill. Close grill lid and cook for about 3 to 4 minutes. Remove green onions and set aside.

Turn chicken breasts and continue grilling until done. Remove chicken breasts from grill and get out the tortillas. Slice chicken breasts thinly. Brush remaining plum mixture on one side of each tortilla. Add 1/8 of the chicken breasts and sliced bell pepper and one green onion. Roll and serve.
