(serves 4)

Spice mix:

½ tsp. White pepper
1 tsp. Cumin
½ tsp. Garlic powder
1 Tbs. Chili powder
1 tsp. Salt
1 Tbs. Oregano
2 Tbs. Olive oil

Main ingredients:

1 lb. ostrich, cut into 1 in. x ½ in. strips
2 Tbs. Olive oil
1 large onion, sliced
1 red pepper, sliced
8 6-inch corn tortillas, fried


Cilantro sprigs

Mix together spices and coat meat.
Heat 1 Tbs. of olive oil in a non-stick pan and sauté meat until just cooked through (1-10 minutes).
Remove and add 1 Tbs. of olive oil to pan and sauté onions and pepper until tender.
Add cooked meat and toss well.
Place fajita mix on tortilla and cover with second tortilla. Garnish with cilantro sprigs, lime and chilies.
