raisin biscotti's

1/2 cup butter softened
1 cup sugar
3 eggs divided
1 Tbsp anise seed
2 tsps grated lemon peel
2 tsp grated orange peel
3 cups all purpose flour
1/4 tsp baking soda
1/2 tsp baking powder
1 cup chopped walnuts
1 cup raisins

heat over to 350* grease a cookie sheet. combine butter, sugar 2 eggs & 1 yolk
(reserve remaining egg whites). beat untill light and fluffy. stir in anise seeds and
lemon and orange peel. combine flour,baking powder and baking soda. stir into
butter mixture; mix well.stir in raisins and nuts. divide dough in half. shape each
1/2 into 12-inch roll. place on greased sheet,allowing space between for spreading.
press tops of rolls to flatten slightly. beat egg white and brush over tops of rolls.
bake in upper third of oven @ 350* for 30 mins or untill lightly brown. remove
from oven, reduce temp to 325*. using a sharpe knife cut rolls into 1/2 inch
diagonal slices. place flat side down, and bake @ 325* for a additonal 10 mins.
repeat, and let cool on a wire racks.
